Our Dolcezza Extra Virgin Olive Oil is crafted with care on our Umbrian estate, where the hills nurture Moraiolo, Leccino, Frantoio and Rajo olives to perfection. Harvested slightly later in the season these olives yield a smoother, more delicate expression of our land.
Pressed within 24 hours and bottled in small, limited batches, this oil reveals soft notes of ripe olive, fresh herbs, and a subtle hint of asparagus. Its balanced, round flavor and gentle finish make it ideal for salads, seafood, and delicate dishes or as a finishing drizzle to add a touch of elegance.
Harvest 2025 olive oil is now ready for shipping. Freshly pressed, with limited quantities available in the first batch.
To preserve the integrity of your extra virgin olive oil, store it in a cool, dark place, ideally between 14°C and 18°C. A pantry or cabinet away from heat sources is perfect. We don’t recommend refrigeration, as condensation inside the bottle can compromise the oil’s flavor.
Our bottles are designed to fully shield the oil from harmful UV light, helping maintain its freshness and vibrancy.
While extra virgin olive oil is wonderfully flavorful, it is a perishable product. Unlike wine, it doesn’t improve with age. When stored properly, however, it retains its character beautifully with only minimal changes beyond 18 months.

Our farming approach goes beyond organic, rooted in regenerative principles that prioritize soil health, biodiversity, and long-term ecological balance. We never use synthetic fertilizers, pesticides, or herbicides, staying fully aligned with (and often exceeding) EU organic standards.
As a small, independent farm, we’re not yet certified organic, which means we cannot legally label our products as such despite meeting the standards in practice. Certification is a multi-year journey, and we’re well into the process.

Our olive oil is carefully packaged and shipped with UPS, using either Standard or Express service. Whichever best suits your location and needs.
Delivery times follow UPS’s transit schedules, with most destinations in Europe receiving delivery within 2–5 business days. Your order will be brought directly to your door, ensuring a smooth and reliable experience from our grove to your home.
